Restaurant Director – Fine Dining & Bar

About the role

The Restaurant Director will lead all aspects of Gallada’s restaurant, bar, terrace and private dining spaces, working closely with the Head Chef and senior brand teams to shape the guest experience and drive business performance.

Key responsibilities

• Plan, lead and guide daily operations of the restaurant, bar, terrace and private dining areas.
• Collaborate with the Chef Director, EAM Food & Beverage and the Director of Brand Marketing to design and execute marketing and promotion strategies.
• Develop and implement strategies that elevate the guest experience.
• Take full responsibility for meeting financial targets, streamlining processes and increasing productivity.
• Communicate customer feedback across Food & Beverage and Culinary departments to keep the customer at the centre of operations.
• Ensure restaurant standards are clearly communicated, observed and adhered to by the team.
• Manage reservations, VIP bookings and special requests, ensuring transparent communication with staff.
• Coach, mentor and guide staff to achieve high performance, retention and engagement.

Required profile

• 8–10 years of experience in high‑standard domestic or overseas restaurants, preferably with Michelin‑level experience.
• Proven ability to project‑manage a large, high‑volume restaurant and bar operation.
• Background in fine‑dining establishments, market‑leading bars and bespoke events.
• Strong financial acumen and familiarity with financial tools and processes.
• Fluent in Turkish and English.
