Head Waiter – Fine Dining Service Lead

About the role

We are seeking an experienced Head Waiter to lead the front‑of‑house team at our new 7 Mehmet location in Tersane Istanbul. The successful candidate will uphold the brand’s high service standards and ensure a seamless, professional experience for every guest.

Key responsibilities

• Coordinate daily floor operations before, during and after service, aligning with reservations and operational needs.
• Maintain 7 Mehmet’s service standards throughout the guest journey, from greeting to farewell.
• Guide and support waiters and other service staff, monitoring service flow and addressing high‑volume periods.
• Facilitate communication between front‑of‑house and kitchen teams to ensure timely delivery of dishes.
• Handle guest requests, feedback and service‑related concerns with a calm, solution‑oriented approach.
• Ensure proper table settings, presentation, grooming standards and compliance with hygiene, food safety and occupational health regulations.
• Assist with opening, closing and shift handover procedures.
• Contribute to onboarding, training and development of service team members.

Required profile

• Solid experience in professional restaurant service, preferably in premium, fine‑dining or high‑volume à la carte establishments.
• Previous role as Head Waiter, Captain, Senior Waiter or a comparable senior service position.
• Strong understanding of table service, restaurant operations and guest relations.
• Excellent communication, organization and problem‑solving abilities.
• Ability to remain composed and attentive under pressure.

Required skills

• In‑depth knowledge of menu items, ingredients and preparation methods.
• Proficiency in coordinating service teams and managing floor flow.
