Executive Chef – Luxury Hotel

About the role

The Executive Chef will lead the culinary operations of Fairmont Quasar Istanbul, a luxury hotel within the Accor portfolio. You will be responsible for delivering exceptional dining experiences while ensuring operational efficiency and profitability.

Key responsibilities

• Set periodic budget and forecast, analyse monthly P&L and month‑end reports, and identify deviations from business plan goals.
• Develop and update departmental SOP manuals, policies, and service standards in line with hotel and municipal requirements.
• Lead menu creation, product development and detailed costing, working closely with the senior culinary team.
• Plan and implement effective food promotions and monitor food standards across all outlets.
• Ensure strict adherence to HACCP and hotel food safety and hygiene standards.
• Conduct weekly walk‑throughs to maintain organization and cleanliness of kitchen areas.
• Prepare accurate departmental reports, schedules, standard recipes, menus and food presentation documentation.
• Identify market trends and adapt menus for hotel guests and the local market.
• Collaborate with other department managers to align culinary operations with overall hotel objectives.

Required profile

• Proven experience as an Executive Chef in a luxury hotel or comparable high‑end hospitality environment.
• Strong knowledge of HACCP, food safety regulations and municipal compliance.
• Demonstrated ability to develop and control budgets, forecasts and P&L performance.
• Experience in menu development, costing and product innovation.
